This is one of my favorite side dishes. It goes well with almost any meal. Also, a good use for extra tomatoes.
Mediterranean Tomato Cucumber Salad:
4 - 6 tomatoes diced (I like heirloom tomatoes, but romas work well too)
1 large cucumber or 4 - 6 persian cucumbers
1/2 small onion diced
2 table spoons olive oil (use a good quality extra virgin oil)
juice of 1 - 2 limes
Salt & Pepper to taste
Dice everything up small (like pico de gallo small) and stir it all together in a bowl.
Goes incredibly well with anything grilled.
