So we were inspired by a new Mediterranean restaurant we found for lunch a few days ago. They had Lebanese Spicy Lemon Garlic Chicken, and it was amazing! Tyson was pretty sure he could re-create it, so we invited my mom over for dinner. She doesn't handle spicy, so we made just Lebanese Lemon Garlic Chicken. Still good!
Here's what you will need:
1 package of chicken. We used all legs, but thighs would work well too.
Marinade:
1 tablespoon olive oil
6 cloves of garlic
juice of one lemon
salt & pepper to taste (about 1 teaspoon)
Mix together the chopped garlic, olive oil and lemon juice. Cover the chicken with the marinade & let it sit over night.
When you are ready to cook it, lightly season the chicken with salt and pepper. Season up high for even spreading.
Roast at 350 for 1 hour
Once the chicken is done, pour the juices into a bowl, and add some fresh lemon juice & fresh chopped garlic. Taste for salt content and add if needed.
Your sauce will look like this:
Serve chicken together with the sauce.
Cucumber tomato salad, Cucumber Yogurt Sauce, flat bread & rice!
