Brined & Baked Pork Chops

So for Halloween, we always have Spicy Pumpkin Coconut Soup for dinner, but most years we also have Pork Chops with it.


First off, you will need to brine your meat before cooking, and you can find brine instructions here.


Once your meat has had a chance to brine, you will need the following:


4 - 6 large, bone-in pork chops (ours are fairly large, thick-cut chops form Costco)

1/2 cup flour

1 teaspoon paprika

1 teaspoon granulated garlic

1 teaspoon chili powder

1 teaspoon oregano

1 teaspoon turmeric

2 tablespoons avocado, olive or peanut oil


First mix all your spices together on a plate.


Then add your flour


Mix well.


Coat each pork chop evenly with your spice & flour mixture, and then sprinkle with salt both sides.

Heat up your frying pan to medium high with the oil in it.


Brown each pork chop for about 4 minutes per side.


Transfer to a baking sheet lined with tin foil. Place in the oven on 400 until internal temperature of 140 (15-20 minutes) Remove from oven & serve!
